Thyme honey is derived from the nectar of thyme flowers growing in Serifos during summertime. Thyme honey is highly aromatic, with a medium sweetness and a strong, lasting taste and smell. It has a rich flavor which includes spicy-pungent, resinous, herbal notes. It is harvested in August and has a medium crystallization time, after 6-10 months after production. It can be restored to its liquid state by warming the jar in warm water (bain marie).
